Craft Cooking 101

You’re on your way home from work and you really don’t feel like busting your ass over a complex dinner, but if you stop at Bojangles’ one more time this month you’re going to fall into a spiral of shame. You go to Google some recipes only to sift through 30 blogs in which the author feels the need to write 10 paragraphs about their grandmother before even naming an ingredient.

Stop wasting your time. In our new Craft Cooking series, Casey Atwell presents easy recipes with 10 ingredients or less that take no time at all to scrape up. All the better, each one includes a local beer to help you bring some craft into your kitchen.

Cherry Scallion Crostini

This tart, refreshing and light crostini is the perfect snack on a warm summer night. Crack open a bottle of Daddy Needs His Juice, a foeder-aged cherry sour from Wooden Robot, and enjoy with good company.

INGREDIENTS

1 French baguette
2 cups goat cheese
6 scallions
2 cups cherries
2 oz. honey
1 bottle Daddy needs His Juice from Wooden Robot Brewery
Olive oil
Salt & pepper

PREPARATION

Slice cherries in half and remove pits. Add thinly sliced scallions (the white part). Combine in equal parts Daddy Needs His Juice and olive oil with salt and pepper. Set in fridge to marinate.

Place sliced baguette and scallion greens on a hot grill. Flip as needed and remove as both the bread and scallions develop a nice char.

Spread goat cheese across the toasted bread. Build up with charred and chopped scallions and cherry salsa. Drizzle with honey. Serve.

Blueberry Sage Onions

These savory, smokey and sweet charred onions are simple to make and pack a ton of flavor. They make for the perfect side to a pan-seared rib-eye steak, topping for a burger with bleu cheese and bacon or have them all alone as a nice veggie snack. Pair with Lenny Boy Brewing Co.’s Seduction Series Volume 1, a red wine barrel-aged blueberry sour and enjoy.

INGREDIENTS

1 large Vidalia onion
½ cup blueberries
½ cup sage
1 bottle Seduction Series V1 from Lenny Boy Brewing Co. 
Oil
Butter
Salt & pepper
Garlic

PREPARATION

Preheat cast iron to medium high heat with a light coating of oil.

Chop peeled onion into eight equal wedges. Place onions cut side down in pan with minced garlic until charred. Flip to other cut side and repeat.

Reduce heat to low. Add 5 ounces of Seduction Series Volume 1, a half-cup of blueberries and a few sage leaves. Leave to simmer.

Garnish with sage, fresh berries, salt and cracked pepper. Serve.
